Cañadío 1981 is Paco Quirós’ first establishment in Madrid, while he opened his first restaurant in Santander back in 1981. La Bien Aparecida has its own Cantabrian identity, featuring chef José Manuel de Dios as its indisputable representative. Gran Café Santander is the latest production of Grupo Cañadío, the return of a popular cafeteria in the Plaza de Alonso Martínez and one of the great news in Madrid this autumn. The name chosen for this business is its best description: Gran Café, a kind of bistro similar to the great cafes where you eat daily in many European capitals, under a continuous schedule.

Two renowned restauranteurs from Cantabria teamed up to create GRUPO CAÑADÍO.

Grupo Cañadío is the result of an alliance created in 2013 between Paco Quirós (Santander, 1956), who owned the different Cañadío venues in Santander and Madrid, and Carlos Crespo Viadero (Santander, 1962), owner of several establishments in Cantabria such as Bodega del Riojano, Vermutería Solórzano or Pan de Cuco. Their concept follows Grupo Cañadío’s timeless business model and product offering, based on simplicity, quality and consistency, and a clearly definable and high-quality product. Crespo highlights the outstanding effort of the kitchen team. “We are chefs. We know how tough this profession is, we tell the truth, not what the audience wants to hear —here is where the honesty so mentioned these days lies”.
